The land cultivated by the Leveque family since 1980 on the banks of the Cher is sandy, chalky parcels, giving a typically fresh and effervescent wine. Minimum SO2 is used, with the winemaker relying on pH and other factors for stabilisation. The Sauvignon is harvested at 4 am to preserve the freshness and aromatics. The wine rests on fine lees for several months, giving a richer texture.
