Jean-François Bordet believes in terroir and does not believe in hiding it behind the oak. So he created a special cuvée, fermented in stainless steel tanks that lie on their side to increase contact with lees. The result is a modern, stylish Chablis with hints of grapefruit and kiwi, leading to buttery soft flavours, lively acidity and a remarkably refreshing finish.
This property has been in the hands of the Bordet family since 1600. Since learning the ropes from his grandfather, Jean-François has established himself as one of Chablis’ outstanding producers.
